Cinnamon is one of the oldest spices known. It was used in ancient Egypt and was so highly treasured that it was considered more precious than gold. Also valued throughout the ages for its medicinal properties, it has remained one of the most frequently consumed spices around the world. We looked forward to hot milk at our grandmother’s house, because she always made it special by stirring it with a cinnamon stick. Canella means ‘little tube’ in Italian, which aptly describes this humble gold. I have broken this little tube into flakes and steeped it in organic cream to make my milk chocolate ganache, reminiscent of my grandmother.
