Designed for guests who have already completed our Signature Chocolate-Making Course, this advanced hands-on experience dives deeper into professional chocolatier techniques alongside Bernard Callebaut.
During this immersive three-hour course, you’ll build on your foundational chocolate knowledge while learning more refined confectionery skills used in artisan chocolate production.
In this Level 2 experience, you’ll learn:
• How to properly cut and portion ganache fillings
• Professional chocolate dipping and enrobing techniques
• An introduction to chocolate decorations and finishing touches
• Tips and tricks used by chocolatiers to create polished, professional-looking products
You’ll then put your new skills into practice by creating a selection of handcrafted chocolates under Bernard’s guidance.
And of course — you’ll take home everything you make.
